Marinated Grilled Pork Tenderloin with Naan, Mustard Yogurt and a Pomegranate and Cucumber Salad

Ingredients

Naan Bread (Makes 10 balls of 90g)

500g Flour (2 cups)1/2 tsp Instant Yeast
1/2 tsp Sugar
1 ½ Cup Warm Water
2 Tbsp Olive Oil
1 Tbsp Club House® Sea Salt, French Mediterranean
100g Clarified Brown Butter
1/2 tsp Keen’s Dry Mustard

Pork Marinade

300g Pork Tenderloin
1 Tbsp Maple Syrup
1 Tbsp Keen’s Dry Mustard
1/2 tsp Club House® Smoked Paprika
1/2 tsp Club House® Cumin, Ground
1 Tbsp Red Wine Vinegar
1 Tsp Garlic Puree
2 Tbsp Olive Oil

Mustard Yogurt

400g Greek Yogurt
1 tsp Keen’s Dry Mustard
1/2 tsp Club House® Sea Salt, French Mediterranean
Juice of 1 Lime

Confit Mustard Seeds

100g Mustard Seeds
100g Cider Vinegar
100g Water
100g Sugar

Garnish

2 Tbsp “Confit” Mustard Seeds + 1 tsp Keen’s Dry Mustard
12 Leafs Coriander (Leafs only)
1 Pomegranate, Seeded
1/2 Cucumber, Diced (No peel)
1 tsp Olive Oil
A Pinch of Sumac

Method

Pork Marinade

Mix all ingredients together

Cover Pork Tenderloin with the marinade. Let sit in refrigerator for at least 3 hours

Grill to make nice grill marks, 5 minutes on each side (“Rose” Medium)

Naan Bread

Mix all the ingredients together, fold by hand for 10 minutes

Form a ball and let ferment for 1 hour in a bowl covered with plastic film

Form 10 balls and sit on a baking sheet with olive oil and plastic film. Ferment for 1 hour

Take a ball, press down with flour and grill for 2-3 minutes on each side

When cooked, add clarified butter and serve

Mustard Yogurt

Mix all ingredients together

Confit Mustard Seeds

Mix all together and cook for 15 minutes

Garnish

Mix all ingredients together

Use as a salsa on top of meat.
