How to dress up store-bought rotisserie chicken

Between work, kids, exercise and a social life, finding time to make dinner can be a difficult task. There is actually an in-between option if the drive through and making an elaborate dinner don’t sound too enticing. Try picking up a rotisserie or BBQ chicken from your local grocery store. Most, if not all grocery stores carry these in their ready-made foods section. There are a variety of ways to make this chicken into an exciting, healthy and quick meal. Plus, there is often enough for lunch or dinner for the next day or two!

Soup

Whether you make a hearty vegetable soup and top it with chicken, or make a chicken soup or stock from scratch, store bought rotisserie chicken makes this simple. These soups help you fill up on vegetables and lean protein while remaining a light, healthy meal.

Tacos

Use store-bought rotisserie chicken to make chicken tacos. Since this is already prepared, just shred the chicken using a fork and set out your favourite toppings. Since everything is already prepared, the only task is assembling your own taco. This could be a fun dinner for the kids since they get to make their own. Cheese, sour cream, lettuce and guacamole are a few ideas of delicious toppings.

Salad

Salads are a simple, healthy and fast meal that requires no cooking at all. Having a quick, ready-made protein at your fingertips makes this meal a breeze. Chop up your favourite veggies and combine it with lettuce and chicken. Have some fun by adding in different textures such as avocado, nuts and maybe even some fruit.

Pasta

Pasta dishes are already pretty quick to whip up, but a meal of simply carbohydrates can leave you unsatisfied and hungry shortly after. Throwing in some store-bought chicken will add wonderful flavour as well as some lean, healthy protein.

Chicken salad

If you are short on time or are looking for a way to use leftover chicken, chicken salad is the perfect choice. Combining pre-made chicken with mayonnaise (or Greek yogurt for a healthier swap), as well as your favourite herbs such as dill and some grapes can easily be made into a sandwich for a filling lunch the next day.

Picking up a rotisserie chicken at your local grocery store can provide for a healthy, delicious and quick meal when you are short on time. There are a variety of ways to use this chicken that just require a little creativity. If all else fails, nothing is wrong with eating the chicken as is, with a side of salad, veggies or potatoes.
