Sublime Beer Bread

There’s nothing like the smell of bread baking. This no-yeast, no-knead bread is essentially fat-free. Substitute dill for the chives if you like. Since it is so low in fat, it doesn’t keep a very long time; eat within a day or two of baking.

3 cups (750 mL) all-purpose flour
1 tbsp (15 mL) baking powder
1 tsp (5 mL) salt
1 bottle (341 mL) Molson 67 Sublime
1 tbsp (15 mL) liquid honey
2 tbsp (25 mL) chopped fresh chives (or 2 tsp/10 mL dried)

Preheat oven to 350°F (180°C). Spray 8 X 4 inch (1.5 L) loaf pan with cooking spray.

In bowl, whisk together flour, baking powder and salt. Make well in centre; pour in beer, honey and chives. Using wooden spoon, stir until thoroughly moistened. Place in prepared pan, levelling dough in pan.

Bake in centre of oven for 45 minutes.

Knock bread out of pan onto rack. Let stand 10 minutes. Serve warm or at room temperature, spread with butter if desired.

Makes 1 loaf.
