This season, consumers are looking for more than just a sweet treat; dessert and beverage choices are increasingly being shaped by a desire for new experiences, from discovering unexpected flavour combinations to enjoying familiar favourites in fresh and creative ways. As tastes continue to evolve, cafés and restaurants are finding new opportunities to reimagine classic desserts while introducing concepts that reflect how people want to eat, drink, and connect.
“Consumers today want desserts that feel both familiar and exciting,” says Kaan Sayiner, CEO and President of D-Spot Dessert Café. “They’re looking for bold flavours, interesting textures, and experiences they can share with friends and family.”
According to industry forecasts and consumer data, some of the biggest dessert and beverage trends shaping 2026 include:
- Global flavours continue to gain momentum: Dessert trend forecasts suggest consumers are increasingly embracing globally inspired flavours and desserts influenced by cultures and traditions from around the world. Rather than relying solely on familiar favourites, consumers are showing interest in desserts that introduce new flavour combinations and experiences.
- Texture is becoming just as important as flavour: Crunch, crumble, crack, and melt are becoming just as important as flavour. Industry experts predict consumers will continue seeking desserts that combine contrasting textures and create a more memorable eating experience.
- Mocktails are having a major moment: As more Canadians moderate their alcohol consumption, non-alcoholic beverages are becoming a year-round lifestyle choice rather than a seasonal trend. Canada’s no- and low-alcohol beverage category has grown to more than $220 million in annual sales and continues to gain momentum, while alcohol consumption recently fell to its lowest level in two decades.
- Nostalgic flavours are getting a modern upgrade: Dessert experts suggest consumers continue to gravitate toward nostalgic flavours and comfort-food favourites, particularly when they’re presented in new and unexpected ways. Familiar ingredients and classic dessert inspirations are being reimagined through premium ingredients, creative formats and elevated presentations.
From LTO’s to craveable menu regulars, desserts offer operators the opportunity to attract new guests, increase cheque totals, and deliver on dining trends – and staying on-trend can offer an advantage for restaurant operators.
